Strawberry Shortcake Garden Sauce

What It Is

Fresh strawberries, honey, dill and white-wine vinegar blend with neutral oil into a sweet-tart dressing for fruit, vegetables and salads.

Origin

A Strawberry Shortcake-inspired fruit vinaigrette. The character is fictional; strawberries remain aggressively seasonal and real.

Fun Fact

Strawberries are not true botanical berries, but bananas are. Botany was apparently written by someone who enjoys chaos.

Ingredients

  • โ…“ cup canola oil
  • 6โ€“8 strawberries
  • 1 tsp dill
  • 2 tbsp honey
  • 2 tbsp white wine vinegar

Steps

  1. Blend all ingredients until smooth.
  2. Taste and adjust vinegar or honey.
  3. Chill before serving with fruit, vegetables or salad.

Notes

Use ripe, in-season strawberries if at all possible โ€” this sauce has nowhere to hide a mediocre berry.

Substitutions

Any neutral oil can replace canola. Raspberries can stand in for strawberries. White wine vinegar can replace regular white vinegar for a slightly rounder flavour.

Storage

Keep refrigerated and use within about 3 days because fresh blended fruit has no interest in becoming immortal.

Freezing

Freezing is usually unnecessary for a small batch of sauce. If you do freeze it, use small portions and expect creamy or emulsified sauces to need a good whisk after thawing.
