This is my canadian-leaning version, built around the ingredients and method that give the recipe its character.

Fun Fact

Acid in lemon and vinegar brightens fatty fish because it cuts through richness instead of trying to compete with it.

Ingredients

  • โ…“ cup mayonnaise
  • ยฝ cup plain Greek yogurt
  • ยผ cup lemon juice
  • 2 cloves garlic
  • 1 tsp white wine vinegar
  • 1 tsp honey

Steps

  1. Whisk all ingredients together until smooth.
  2. Season with salt and pepper to taste and chill before serving.

Notes

Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
