Spicy Potato Bacon
This creamy baked potato bacon soup is spiced up with a little heat on those cold days. Serve this delicious, hearty soup with crusty bread or rolls and a simple tossed salad for a fabulous soup supper.
Ingredients
- 3/4 cup unsalted butter
- 3/4 cup all-purpose flour, unbleached
- 7 cups 3% milk
- 3 large red potatoes, baked, cooled, and cubed (about 4 cups)
- 4 stalks green onions, thinly sliced
- 1 cup rutabaga (swede), peeled and diced
- 1 tbsp hot sauce
- 10 to 12 strips maple bacon, cooked, drained, and crumbled
- 1-1/4 cups cheddar cheese, shredded
- 1 cup (8 oz) sour cream
- 3/4 tsp cracked black pepper
- 3/4 tsp sea salt
Steps
- In a large Dutch oven or stockpot over low heat, melt the butter.
- Stir in flour; stir until smooth and bubbly and the flour is cooked, about 2 minutes.
- Gradually add milk and cook, stirring constantly, until the sauce has thickened.
- Add cooked cubed baked potatoes, rutabaga, and green onions. Continue to cook, stirring constantly, until the soup begins to bubble.
- Reduce heat; simmer gently for 10 minutes.
- Add remaining ingredients; stir until cheese is melted.
- Serve with baguettes, buns, or a salad on the side.
