Ingredients

  • 1 cup basmati rice
  • 2 tbsp unsalted butter
  • 1 lb peeled shrimp
  • Kosher salt and black pepper
  • 2 tbsp minced garlic
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 tbsp freshly grated ginger
  • 2 tbsp red curry paste
  • 1 can coconut milk
  • 3 cups vegetable stock
  • Juice of 1 lime
  • 2 tbsp chopped fresh cilantro

Steps

  1. Cook the basmati rice according to package directions and set aside.
  2. Melt butter in a large stockpot over medium-high heat.
  3. Add shrimp, season with salt and pepper and cook 2โ€“3 minutes, until pink and cooked through. Remove and set aside.
  4. Add garlic, onion and bell pepper to the pot and cook 3โ€“4 minutes.
  5. Stir in ginger and cook 1 minute.
  6. Whisk in curry paste, then gradually whisk in coconut milk and vegetable stock.
  7. Bring to a boil, reduce heat and simmer 8โ€“10 minutes.
  8. Stir in rice, shrimp, lime juice and cilantro. Serve hot.
