- 1 cup 3% whole milk

Steps
- Dice the bacon and onion and slice the carrots and celery.
- Cook bacon in a large pot over medium heat until crisp. Transfer bacon to paper towel and leave about 2 tbsp fat in the pot.
- Add onion, carrots and celery. Season with salt and pepper and cook about 5 minutes.
- Add garlic and cook 1 minute. Sprinkle in coconut flour and cook 2 minutes.
- Add thyme and cauliflower, then pour in broth and milk.
- Bring to a low boil, immediately reduce to a simmer and cook about 15 minutes, until cauliflower is fork-tender.
- Garnish with the crisp bacon and chives if desired.
