Ingredients

  • 1 lb ground pork, for the meatballs
  • 1/2 cup panko breadcrumbs
  • 1 whole egg, beaten
  • 1-1/2 tbsp fresh ginger, grated
  • 1/2 tsp cayenne pepper
  • 1 tsp sea salt, for the meatballs
  • Black pepper, to taste
  • 8 cups vegetable broth
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 package extra broad egg noodles
  • 3 cups baby spinach (or bok choy)
  • 3 stalks green onions, finely chopped
  • 2 to 3 lime wedges, for serving

Steps

  1. Meatballs: in a large bowl, combine ground pork, panko, egg, water, garlic, ginger, and crushed red pepper flakes, and season with salt and pepper. Mix well and shape into 28 meatballs. Transfer to a parchment-lined baking sheet and refrigerate 20 minutes.
  2. Meanwhile, in a large pot, combine broth, soy sauce, and vinegar and bring to a boil. Add the egg noodles and gently drop in the meatballs. Reduce heat to a simmer, stirring occasionally, until the noodles are tender and the meatballs are cooked through, about 15 minutes.
  3. Stir in the spinach until wilted, then remove from heat. Serve in bowls and garnish with green onions and lime wedges.

Substitutions
