Shrimp cook very quickly. The difference between tender and rubber-band cosplay can be only a couple of minutes.

Ingredients

  • 8 oz peeled shrimp
  • 2 tbsp olive oil
  • 2 tbsp ghee
  • 3 cloves garlic
  • 1 lemon, zested and juiced
  • ¼ tsp salt
  • 2 medium zucchini, spiralized

Steps

  1. Preheat oven to 400°F (205°C).
  2. Combine everything except zucchini in a baking dish.
  3. Bake shrimp 8–10 minutes, turning once, until just cooked.
  4. Add zucchini noodles, toss and serve.

Notes

Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
