Bacon Applewood Grilled Cheese
Sourdough is layered with smoked cheddar, thin apple slices, Dijon and maple bacon, then grilled until crisp outside and molten inside. It is grilled cheese after it bought flannel and started talking about campgrounds.

This is a sweet-savoury grilled cheese built from smoked cheddar, apples, Dijon and maple bacon on sourdough.
Origin
Grilled cheese sandwiches have many North American forms. This specific camping-inspired applewood version is a Dinner by the Minute creation.

Apples pair particularly well with aged and smoked cheeses because their acidity and sweetness cut through the richness and salt of the cheese.
Ingredients
- 8 slices sourdough
- 4 tbsp Dijon mustard
- 12 slices smoked cheddar
- 1 Gala apple, thinly sliced
- 1 Jazz apple, thinly sliced
- 12 slices maple bacon
- 3 tbsp mayonnaise
- Dash smoked applewood seasoning
Steps
- Spread Dijon on one side of four bread slices.
- Top each with smoked cheddar, apple slices, applewood seasoning and maple bacon.
- Close with the remaining bread slices.
- Spread a thin layer of mayonnaise on the outside of each sandwich.
- Cook in a skillet over medium-low heat for 3–4 minutes per side, until golden and the cheese is melted.
Notes
The source specifies branded applewood seasoning. Any comparable smoked applewood-style seasoning can be used without requiring brand loyalty at breakfast.
Substitutions
Use butter instead of mayonnaise on the outside. Swap smoked cheddar for Gouda, Gruyère or sharp cheddar. Use your favourite apple. Turkey bacon can replace maple bacon.
Storage
Best eaten immediately. Refrigerate leftovers for up to 1 day and reheat in a skillet or oven.
Freezing
Not recommended assembled because bread and apple texture suffer after thawing.
