Sarah’s Famous Homemade Cheesecake
Sarah’s Famous Homemade Cheesecake brings graham crackers, finely crushed (about 1¼ cups), tbsp. monkfruit sugar and the rest of the crew together in a recipe that is practical enough for a normal kitchen but still has enough personality to avoid tasting like committee food.
What It Is
Sarah is known for her cheesecakes. Many have wondered how she makes them until now. Her recipe for this delectable dessert can be modified to fit and cheesecake flavours. The cheesecake people kept asking Sarah to explain.
Origin
This version is connected to as: Canada (Alberta), Greece (Samos).. I keep that connection as part of the recipe’s personality without pretending every dish arrived with a notarized birth certificate.
Fun Fact
The cookbook version really does pair 8 graham crackers, finely crushed (about 1¼ cups) with 6 tbsp. monkfruit sugar. That combination comes straight from the original recipe, not from a late-night refrigerator séance.
Ingredients
- 8 graham crackers, finely crushed (about 1¼ cups)
- 6 tbsp. monkfruit sugar
- 3 tbsp margarine, melted
- 1 pkg. (8 oz) cream cheese, softened
- ¾ cup 35% whipping cream *optional
- 137
Steps
- Combine graham crumbs, 2 tbsp monkfruit sweetner and margarine; press onto bottom and up side of 9-inch pie plate. Bake 8 to 10 min. or until lightly browned; cool completely.
- Mix cream cheese, whipping cream and remaining monkfruit sweetener in medium bowl and mix in high until thick and well blended; spoon into crust.
- Refrigerate 3 hours.
- Top with desired fruit or sauce before serving.
Notes
Taste near the end and adjust. Salt, acid and heat are much easier to add than remove, despite what some of my more enthusiastic recipes occasionally imply.
Substitutions
From the cookbook: You can also use regular sugar instead of monkfruit.
Storage
Cool leftovers promptly and refrigerate in a covered container. Keep crisp garnishes separate whenever possible so tomorrow’s lunch does not become damp architecture.
Freezing
Freeze cooked components in meal-sized airtight portions where practical. Dairy-heavy sauces and fresh garnishes may change texture, so add those fresh after reheating when possible.
