Rocky Mountain Road Parfait
Rocky Mountain Road Parfait brings serving-size package chocolate or chocolate, cups milk and the rest of the crew together in a recipe that is practical enough for a normal kitchen but still has enough personality to avoid tasting like committee food.
What It Is
These rocky road parfaits are absolutely devine and reminiscent of your childhood. For those who enjoyed this sweet dessert, we all remember our fondest love for chocolate. Chocolate, marshmallow and parfait layers built for emotional emergencies.
Origin
This version is connected to as: Canada (Jasper), U.S.A. (Oakland).. I keep that connection as part of the recipe’s personality without pretending every dish arrived with a notarized birth certificate.
Fun Fact
The cookbook version really does pair 1, 4-serving-size package chocolate or chocolate with 2 cups milk. That combination comes straight from the original recipe, not from a late-night refrigerator séance.
Ingredients
- 1, 4-serving-size package chocolate or chocolate
- 2 cups milk
- ½ cup whipped cream
- ¼ cup unsalted peanuts, coarsely chopped
- ¼ cup tiny marshmallows Chocolate curls (optional)
- 2 early as 2000 BC.
- 2 cups special and it was reserved
Steps
- Prepare pudding mix according to package directions using the milk.
- Remove ¾ cup of the pudding and place in a small bowl; fold in whipped topping until combined.
- Divide remaining plain chocolate pudding among four 6 oz glasses or dessert dishes. Top with dessert topping mixture. Let stand for 5 to 10 minutes or until set.
- Sprinkle with peanuts and marshmallows. If desired, garnish with chocolate curls.
Notes
Taste near the end and adjust. Salt, acid and heat are much easier to add than remove, despite what some of my more enthusiastic recipes occasionally imply.

Storage
Cool leftovers promptly and refrigerate in a covered container. Keep crisp garnishes separate whenever possible so tomorrow’s lunch does not become damp architecture.
Freezing
Freeze cooked components in meal-sized airtight portions where practical. Dairy-heavy sauces and fresh garnishes may change texture, so add those fresh after reheating when possible.
