Rachel’s Terrific Tuna Melt

What It Is

Rachel's tuna melt was one of our featured episodes on Dinner by the Minute and has been widely received as one of the best recipes. Simple and healthy as well as quick. Hot tuna, melted cheese and zero interest in sad desk lunches.

Origin

Tuna melts trace back to mid-20th-century North American diner culture, when canned tuna was cheap, shelf-stable, and endlessly adaptable. This version keeps that same diner-counter practicality.

Fun Fact

Canned tuna's popularity exploded during WWII, when it was one of the few proteins not rationed into oblivion. Seventy-some years later, it's still the sandwich equivalent of a security blanket.

Storage

Best assembled fresh, but the tuna mixture on its own keeps refrigerated for up to 2 days. Don't freeze it — mayonnaise-based fillings separate badly once thawed.

Freezing

Not stated in the cookbook. Freeze cooked meat or filling separately when practical; assembled sandwiches with lettuce, tomato or creamy sauces are poor freezer citizens.
