Ingredients
- Juice of 4 blood oranges
- Juice of 1 navel orange
- 2 cloves garlic
- 1 tbsp diced shallot
- 2 tsp olive oil
- ½ tsp ground ginger
- 4 tbsp brown sugar
- ½ cup pineapple juice
- ¼ cup sweet chili sauce
Steps
- Soften shallot and garlic in olive oil with a pinch of salt.
- Add the remaining ingredients and stir well.
- Cook over medium to medium-low heat for 20–30 minutes, until reduced and thickened.
Notes
Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
