Ingredients

  • ¼ cup almond flour
  • ½ cup shredded coconut
  • 2 tbsp sweetener
  • 1 tbsp vanilla extract
  • 1 tbsp coconut oil
  • 3 egg whites

Steps

  1. Preheat oven to 400°F (205°C). Mix almond flour, coconut and sweetener.
  2. Melt coconut oil and mix in vanilla; stir into the dry mixture.
  3. Whip egg whites to stiff peaks and gently fold them into the coconut mixture.
  4. Spoon onto a baking sheet and bake about 8 minutes, until lightly browned. Cool before moving.

Notes

Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
