What It Is
Mozzarella, almond flour, cream cheese and egg form a low-carb dough seasoned either Italian-style or extra-cheesy, then baked until crisp.
Origin
This is my italian-leaning version, built around the ingredients and method that give the recipe its character.
Fun Fact
Psyllium husk absorbs a surprising amount of water, which is why a small spoonful can dramatically change low-carb dough texture.
Ingredients
- 2 cups mozzarella cheese
- ¾ cup almond flour
- 1 tbsp psyllium husk powder
- 3 tbsp cream cheese
- 1 large egg
- 1 tsp baking powder
- 2 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 3 oz cheddar cheese
- ¼ cup Parmesan
Steps
- Preheat oven to 400°F (205°C). Mix egg and cream cheese. Combine dry ingredients separately.
- Melt mozzarella in short microwave bursts until very soft.
- Mix the egg mixture and dry ingredients into the melted mozzarella and knead into a dough.
- Press flat on a silicone mat or parchment, season as desired and cut into strips.
- Bake 13–15 minutes on the top rack until crisp and browned.
Notes
Taste before the final adjustment. A recipe should guide dinner, not bully it. If it needs a little more acid, sweetness, salt or heat, make the change in small steps instead of launching the whole spice rack into orbit.
Substitutions
Use equivalent ingredients where needed for allergies or availability, but keep the main sweet/sour/salty/spicy balance intact. This is cooking, not a hostage negotiation.
Storage
Cool leftovers promptly and refrigerate in a covered container for up to 3 days. Keep fresh garnishes separate where practical.
Freezing
Freeze cooked components in airtight meal-sized portions for up to 2–3 months where practical. Fresh vegetables, dairy sauces and crunchy toppings are usually better added after thawing.
